Cooking is fun! Especially when you cook with a Primus OmniFuel Multi Fuel Backpacking Stove & two (rather small) MSR ceramic pots in the open air. It asks for a lot of creativity based on the local products in each country. Please find below our one-pot and two-pot recipes for some inspiration. All recipes are sufficient for two (hungry) persons after a complete day biking. Most of the recipes will be vegan/vegetarian.

Pasta with vegetables :

  • 250 gram pasta (cooked al-dente)
  • 2 zucchini
  • 1 yellow paprika
  • 1 red paprika
  • 400 gram bio tomato cubes
  • Basilicum (fresh if available)

Tip : cook the pasta within the sauce for the last 60 seconds, this gives the pasta a great taste

Risotto with tomatoes and spinach:

  • 10 medium large tomatoes
  • 300 gram spinach
  • Portion of spring onions
  • 300 gram risotto rice
  • Little bit of white wine
  • Water (on feeling)
  • Salt, Pepper
  • Dried basilicum, parsley, oregano

Black Lentil Soup :

  • 250 gram black (beluga) lentils
  • 3 large carrots
  • 3 leeks
  • 1 onion & 2 garlic cloves
  • 300 ml water
  • 1 can coconut milk
  • 2/3 tea spoons Garam Masala

Tip : fill the water within the coconut milk can before adding it to the pot, make use of all

Mung Dahl with cabbage :

  • 250 gram Mung Dahl
  • 600 ml water
  • 1 onion
  • 1 white cabbage
  • 2/3 tea spoons Ras El Hanout
  • Coriander (fresh if available)

Tip : cook the Mung Dahl separately from the white cabbage, mix together when both cooked

Lentil curry with carrot, beans and tofu:

  • 250 gram lentils
  • 2 red onions
  • 4 large carrots
  • 300 gram green beans
  • Curry paste/sauce (or make yourself)
  • 250 gram smoked tofu
  • Salt, Pepper
